Pumpkin Fritters/Patties/whatever

An original recipe I just made and ate.

Ingredients (To make enough for 2 people):

Half of a small pumpkin
A smallish onion
2 eggs
1 Tbsp Tomato relish or similar
1 tsp Wholegrain Mustard
About a cup of breadcrumbs
Salt and Pepper to taste
1Tbsp Oil or butter
Cayenne Pepper to taste

Procedure to loosely follow:

Chop up the pumpkin and remove the skin and seeds. Put in a pot of boiling water for 5-10 minutes, or until just soft enough to mash. Chop the onion as finely as you want.

When the pumpkin’s ready, drain the water and mash it. Add all the other ingredients and mix well.

Fry at medium heat with a little butter or oil until the onion starts to caramelise.

Serve with some kind of tangy sauce (eg more tomato relish). Sorted.

A side note about a side salad: if you’re going to eat dandelion leaves raw, go for the younger leaves; the older ones are kind of bitter.
